Parsley Bolting (when it’s going to seed) is shown, and how to dead head the plants and gather the seeds. Normally parsley looks as you would expect with it’s leaves, but once it goes to seed, you can see the flowers changing and the plant producing seeds. At this time, the chemistry in the plant can change and the taste of the herb can be affected. You can let it go to seed and collect the seed, or allow the plant to self seed.

Another option is to deadhead the plant to stop it going to seed, and then you can continue to use the herb in cooking without the flavour being affected. Parsley can become bitter if it is left to go to seed.
